"I have always photographed pastries, especially the ones I made," Spiegel told Mashable in an email. "When I came to Paris to study pâtisserie I was overwhelmed by the variety of pastries this city has to offer. I started doing pastry exploring whenever I had a day off school and taking photos and tasting."

While Spiegel is a trained pastry chef, his Instagram account is mainly a love letter to all the pastries of Paris. Therefore, he features confections created by chefs he admires. He always makes sure to let his followers know who made the treat and where it can be found, as he hopes his photos will lead people to trying all sorts of new pastries.
As for eating all the sweets he features, Spiegel says he's more of a taster.
"I don't eat them, I taste them," he explained. "It is important for me to try the flavors and textures for my own exploration. Plus, I write what's in them and explain them on my Instagram. So I wanna be as specific as I can with my followers. Had I eaten each cake every day, we wouldn't be talking right now."

As for the shoes, Spiegel owns every single pair featured. He owns around 70.
"[I've] never really counted them, but let's say my Parisian apartment is running out of shoe space," he said.
